Area of production: Veneto Region
Method used: Pure off-skin fermentation with a brief on-skin maceration at a controlled temperature using gentle pressing. Natural second fermentation in an autoclave for about 40 days at 13-14°C before being left to rest on its yeasts for about three months.
Alcohol content: 11,5%
Sugar residue: 4 g/l
Pressure at 20°C: 5 bar

Organoleptical features

Colour: Brilliant straw yellow with a dense, soft mousse and fine, persistent perlage.
Perfume: Intense and inviting, filled with sensations of white-flesh and tropical fruit, hints of wisteria and acacia flower.
Taste: In the mouth it’s very dry, tangy, taught and courageous in its almost total lack of sugar residue. The wine has a long close over citrus tones.
Aftertaste: Satisfying with clear fruity hints.
Food affinities: Perfect throughout the meal, delicious with cold cuts and cheeses.
Serving temperature: 6 - 8°C
